Looking for ideas to your New Years Eve dinner? Shrimps on toast (Toast Skagen) is a classic, simple Swedish starter and wonderful way to start of New Years. I think a Toast Skagen should be basic and not to advanced, but in my version I add horseradish for extra flavor.
You might think that Toast Skagen comes from Denmark, from the fishing port Skagen but actually it is a Swedish dish that was originally invented by a swedish chef called Tore Wretman in the 1950´s.

Classic Toast Skagen
Makes 4 portions
500 g Shrimps with shell (18 ounces)
1 small red Onion, finely diced
4 tablespoons of Mayonnaise
3 tablespoons of Creme Fraiche
Salt and freshly grounded Black Pepper
Fresh Dill, chopped
4 slices of Bread (I used gluten free)
- Peel and chop shrimps.
- Put shrimps, onion, dill, mayonnaise, creme fraiche in a large bowl. Blend well. Flavor with salt, pepper and horseradish. Let it rest in the fridge for a few minutes.
- Cut of the edges from the bread. Fry on both sides in a pan until golden with lots of butter.
- Put shrimp mix on the bread and garnish with a generous spoon of roe, sprig of dill and a slice of lemon. Serve right away.
