This fluffy, thick, gluten free and tasty American Pancakes is the perfect way to start the day on a weekend and when you just feel like a luxurious long breakfast or brunch. In Sweden we make thin and big pancakes served with jam and whipped cream, it´s completely different from the American version.
You can whip up this American pancakes in no time and you can´t even tell they are gluten free. Flavor your pancakes with fresh blue berries or sliced banana.
Makes 4 portions
3 dl Glutenfree Flour Mix
1 teaspoon Psyllium Husk
2 teaspoons Baking Soda
½ teaspoon Salt
2 tablespoons Sugar
½ teaspoon Vanilla Powder
2 tablespoons Butter, melted
2,5 dl Milk
- Mix all dry ingredients in a large bowl.
- Add milk, butter and eggs. Mix until smooth. Let it rest for 5 minutes. The batter should be thick.
- Fry in a frying pan with butter.
- Serve your American pancakes warm with fresh berries and myple syrup.
