The Punsch Roll is a Swedish small pastry that is fun to make your self and delicious to offer your guests together with coffee. The pastry is covered with green marzipan with the ends dipped in chocolate and a inside mix of crushed cookies and punch liqueur. Because of the cookies inside it´s hard to find gluten free versions in stores.
This pastry is often called “vacuum cleaner”, referring not only to its appearance, but also to the baker collecting crumbs from yesterday’s cookies for filling. It´s a perfect way to get rid of left over cookies (if you ever have any).
You can find ready roll marzipan in stores that make it even easier to bake the gluten free Punsch Roll. I chose original green color on my marzipan but if you want to make it more fun you can find other colors like blue, pink or white. If you don´t like marzipan you can roll the dough in chocolate and sprinkles instead.

Gluten Free Punsch-Roll
Makes 15 pieces
100 g Butter (4 oz)
1 dl Powdered Sugar (1/2 cup)
1/2 teaspoon Vanilla Powder
2 tablespoons Cocoa
4 dl Cookie Crumbs (1 2/3 cups), I used the crumbs of gluten free cake
2 teaspoons Punsch Liqueur, or any of your favorite liqueur
70% Dark Chocolate
- Mix butter, powdered sugar, vanilla and cocoa. Add the crumbs and stir until well blended.
- Add the punch and taste. Let the dough cool for a while.
- Roll out to about 5 cm long pieces. Dress them with thin marzipan.
- Dip the ends in melted chocolate.
If you use ready rolled marzipan and want it to be gluten free make sure to read the ingredients on the box, some use flour in the process.
