I just love food that you can put everything in one pot. This comforting vegetarian Aubergine Gratin recipe is just like that and it combines some of the best and simplest flavors Italy has to offer. You can serve it as a vegetarian meal together with a salad or as a side dish with lamb or you favorit meat.
I´ve put both Parmesan and Gruyère cheese (except for mozzarella) in this recipe but you can put what ever cheese you prefer i your gratin, but it´s important to remember to use a strong cheese with lots of flavor.
