After a rainy week in Gothenburg the sun finally decides to shows up and we ran out the apartment this morning to soak it all up. These days you don´t want to stay in and make a slow cooked Sunday roast, you want a quick but delicious meal. This recipe of stuffed Chicken Breast with balsamic vinegar carrots is perfect for these days, plus it includes bacon which is always a good idea!
Tomorrow work starts again after my five week summer holiday and it feels like autumn is already here. I can´t believe how fast summer goes! When you were a kid it seemed like summer lasted forever but these days it just flies by. Is this one part of getting older? Maybe. I guess it’s also because we have been doing so much this summer.
