Seared Scallops with Trout Roe and Green Pea Puree
We have recently started “Come dine with me” with two other couples and every couple are going to host a dinner party. The menu are consisting of at least a starter, a main and a dessert. So much fun! Originally the guests are going to rates the dinner on a scale of one to ten but we skipped that bit. Me and Freddy were first up and we served this dish as a starter. Amazing flavors and looks very impressive, don´t you think?
Butter fried Scallops with Trout Roe and Green Pea Puree is ideal to offer either as a starter or main dish. I served the pea puree cold but you can also serve it warm if you prefer. To make it easier I prepared the puree and serrano chips the day before and just seared the scallops before serving.
This recipe may look fussy, but it’s actually feasible for a weeknight. Please let me know what you think!
