After eating plenty of Christmas food I feel like eating something completely different – something fresh and spicy. One of my favorite take away has to be chicken pitas. When you buy it on the street it´s very greasy and unhealthy but if you make it at home, from scratch, it´s only good healthy ingredients.
This Chicken Pita recipe is everything I want right now, lots of flavor and crispy vegetables. It´s a very tasty and extremely simple sandwich. You do need to marinate the chicken at least 3 hours. I usually do it overnight.
I make my own gluten free pitas but you can buy them ready at the store for a quicker meal.
