Crispy Wiener Schnitzel with Capers Mayonnaise
This is a classic recipe of crispy Wiener Schnitzel that I serve with capers mayonnaise. Schnitzel is originally from Austria and traditionally made with veal (known as Wiener Schnitzel) but can also be made with pork, or even chicken. It´s real simple to make and perfect comfort food as I know it. Greasy and tasty! It is often served with French fries but in this recipe I serve it with roasted potatoes. If you want it to be with less calories just serve it with a fresh salad instead of potatoes.
My recipe of crispy Schnitzel is gluten free but can easily be made with regular flour and bread crumbs. If you are not gluten intolerant you can even try breading it with panko for a lighter, flakier, Japanese-style coating.
