Dark Chocolate Truffles
How have you weekend been? Mine have been fantastic after spending one night with Freddy at Hotel Dorsia here in Gothenburg, Sweden. If you ever come to Gothenburg you have to make a visit here, just to have a cocktail or to eat at their amazing restaurant. We had a fantastic dinner with tasting menu and wine package and sleeped like kings afterwards.
Christmas is getting closer and I´m starting to get even more in the mood for baking candy and cookies. Dark chocolate truffles are a classic and a must on Christmas if you ask me, but works equally well on other festive occasions. If you have tried to make it before you may know that chocolate ganache, or chocolate truffles, that splits are very common. There are many ways, in theory, to save a ganache that has separate itself, but if it then works in reality is another thing. One theory is that you should add a hot liquid to lower the fat content, preferably glucose or alcohol. I warmed up a little dash from the liquor cabinet, to put it to ganachen and mixed together with hand blender. Haleluja, smooth and delicate!
