Espresso Ice Cream with Dulce de Leche
Spring has finally arrived here in Gothenburg, or I can even say summer since we have had 18°C today. So what suits better than to continue with my ice cream obsession and this Espresso Ice Cream with Dulce de Leche. Ice cream is the perfect dessert or snack to indulge in these next few months, don´t you think? And Espresso and Dulce de Leche are a match made in ice cream heaven if you ask me.
Ever tried roasting white chocolate? I serve it as a topping with my Espresso ice cream and it’s a favorite technique of mine. When the white chocolate is cooked at a low heat, the sugar and milk slowly caramelize, coloring it golden brown and flavor it with a toasty, butterscotch-like flavor. Once cool, the result can be broken into pieces and used anywhere you’d use the regular stuff.
