  1. Turn oven on 225°C (440 F). Melt butter and let it cool.
  2. Combine sugar, brown sugar and eggs.
  3. Combine almond flour, buckwheat flour, cocoa, bicarbonate, vanilla, salt and xanthan gum in a bowl. Add it to the egg mixture. Stir in the melted butter.
  4. Shape the batter into 18 balls and place on a baking sheet. Top the balls with nuts and chopped chocolate.
  5. Bake for about 7 minutes in the preheated oven, or until edges are nicely browned. Leave on the tray for a couple of minutes to firm up and then transfer to a cooling rack.
