Gluten free Crispy Onions
thinly sliced onions
Corn Flour, Buckwheat Flour and Rice Flour
Equal parts of all flours
Slice onion to very thin slices, preferably using a mandoline. Rinse it in ice cold water and gently wipe with a towel.
Heat a frying pan with some oil over medium heat.
Dip the onion in the flour mixture and shake thoroughly. Add the onion to the pan and let it reduce by half. Add sugar and salt.
Reduce heat and continue browning until onions are dark, golden and crusty. Add more oil if needed.
Heat oven to 60°C (140 F).
Places the onions on a towel and bake in the oven for about 1 hour. Let it cool in room temperature.
Store in a glass jar with a tight-fitting lid.
If the crispy onions turns soft after storing for a while you can make them crispy again by repeating step 5-7.
