Mimosa Eggs with smoked Salmon
The snow is still falling outside even tho’s technically supposed to be spring here in Gothenburg now. To call it spring the weather temperature have to be over 0°C but below 10°C for a whole week round-the-clock. Sure, it feels too cold to be spring but in my mind, it’s around the corner. I´m craving these first fresh primeurs like green asparagus, new potatoes, rhubarb and everything else that reminds me of spring. That is why I made Mimosa Eggs with smoked Salmon the other day when we had friends over for dinner. It´s a simple dish that I served as a first course but it looks pretty impressive, don´t you think?
