  1. Hard boil the eggs. Cool them, peel and half. Scoop out the yolks and place the egg whites on a platter.
  2. Mash three of the yolks, save one, with a fork in a bowl and mix with mayonnaise, mustard, cream, salt, pepper and chives. Place in a piping bag.
  3. Pipe the mixture in the wholes of the egg whites. Grate the last of the yolk over the egg whites.
  4. Break off the bottom part of the asparagus. Boil water with salt in a saucepan. Add the asparagus and cook it under the lid for 3-4 minutes. Cool in cold water.
  5. Place almonds, pistachios and fennel seeds i a blender and mix. Add salt, pepper and sesame seeds. Add olive oil until nice texture.
  6. Place asparagus, eggs, salmon and almond and pistachio oil on four plates. Garnish with lemon, radishes and cress.
